HEAD CHEF / CREATOR
After making up my mind to get into the restaurant business I developed a great food concept called the Dawg House Famous Footlongs & More. The mission was simply to build an alternative quick service eatery that provides a wide variety of fresh, hot, delicious quality food at a reasonable price. I would like to think by the very positive response, that we hit a bullseye. We encountered such great support and very heart felt appreciation for our food and service that a full blown sports bar was being designed around the great tasting food just a few months later. The first location was a carry out only that opened in july of 2012. Eight months later after a complete build the grand opening of the second location was opened. With the help of a zagat award winning chef and highly sought after restaurant consultant/co creater of the highly sucessful Grindhouse Burger in downtown atlanta Georgia my vision was complete. Now armed with the knowledge and experiance it was time to strike while my skillet was red hot. So back to the kitchen I went and what would follow was nothing less then amazing.
I would now like to introduce you to my new food concept:
BIG DAWG CAJUN & SMOKE
It's a combination of my love for cajun and creole food matched with the finger licking flavors of authentic slow smoked bbq and my enjoyment of down home festive southern cusine. Once you pair this with our passion for quality ingredient what you get is a memorable and enjoyable food exprience that can be enjoyed by anyone anywhere for any occasion.
Chef Jerry
SOUS CHEF / ASST. HEAD CHEF
Nurtured from the time he was able to walk, Chef Jerry carried cast iron skillets and wooden spoons before he knew how to carry books from school. With the guidance of Grandma and Mom he learned in their kitchens recipes and techniques passed down from generations. Original German, French, Spanish and Norwegian far along with the American influence created an atmosphere of blending recipes from various sources. Going to work before he could drive for a relative, a master Chef trained in Cajun and creole, Chef Jerry for his niche for his future in the food industry. After working in several ethnic venues he was able to realize his dream and received his formal training in New Orleans. His background and extensive varied experience has allowed for not only authentic ethnic fare but opened the door for a techno blend of varying culture foods that has not changed his love for down home cooking, true Cajun and Creole fare and mastering the art of smoking foods. His philosopy is simple... food does not have to be fancy, expensive or served on a silver platter... it just has to be good and memorable!
